- To prepare the batter : In a mixing bowl combine tagonton, all-purpose flour, cornstarch, Mama Sita’s Palabok Mix and water. Stir in sweet potato, tofu and leeks.
- To form the fritters : In a saucer, form batter mixture into small 3”(45 g) patties. Gently slide into pre-heated pan with hot oil and fry until golden brown, about 5 minutes. Drain excess oil. Continue process until you use up the batter mixture. Serve hot with garlic dipping sauce.
- To prepare the sauce : In a bowl, combine vinegar, garlic, black pepper and salt.
